I carved the curved surface of a skateboard. I measured the curvature of the surface with a ruler and vernier taking a sample every inch. I then modeled the curve in Sketchup. I created a template to check for accuracy. I then did the carving while following that curve. Came out great.

I also have a probe for engraving/carving uneven surfaces.
